“This season of life is crazy and busy and chaotic, but we wouldn’t trade it for the world,” said Allison Parks. “I am a stay-at-home mom but I am hardly ever at home!”
Allison and her husband Matt have been married for 14 years and have a blended family that brings them incredible joy. Their children are Seth (24), Zadyn (12), Tyler (9) and Gracie (6 months).
“Matt and I have always wanted children of our own. We went through fertility treatments and suffered several miscarriages before we made the decision to foster,” Allison shared. “We have fostered 15 children over five years and adopted two of them.”
Dinner time at the Parks home is described as slightly chaotic.
“Dinner time is crazy! There are usually dogs running around barking and kids playing and running in and out of the kitchen,” Allison shared lightheartedly. “I’m making dinner with a baby on my hip and Daddy is just trying to hold the fort down.”
One of the family’s absolute favorite things each week is Taco Tuesday. They are a gluten-free family so sharing their taco recipe twist was without question for this month’s Dinner’s Ready.
“A lot of our meals are planned around Tyler,” said Allison. “He has autism and is very picky about the types of food he eats. Tacos are a safe food so we eat them often!”
The Parks family all enjoy their taco nights a different way. Some fix salads, some prefer soft shells and minimal toppings, while some prefer crunchy shells and all the toppings. The versatility of the meal makes this perfect for larger families with picky eaters and those busy back-to-school weeknights.
Gluten-Free Tacos
Ingredients:
- 1lb Ground Beef
- Gluten-Free Taco Seasoning
- Gluten-Free Beef Stock
- Crunchy Taco Shells or Soft Flour Tortillas
- Toppings: shredded lettuce, diced tomato, shredded cheese, salsa, sour cream, Tajin
Directions:
- Place the ground beef in a skillet with a little olive oil and brown. Drain any fat.
- Add the taco seasoning and 3/4 cup of beef broth to the meat and mix together.
- Allow the meat mixture to simmer about 3-5 minutes until tender. Remove from burner.
- Use the meat in desired taco shells or tortillas.
- Top with desired ingredients. Enjoy!
